I won't go any farther than that because there are a lot of optional and random dungeons that can give you unlocks so I don't want to spoil it. This should be a pretty decent starting guideline though.

Items are randomly generated each playthrough.  You can drop gems and immediately see if it's worthless or not.  You can also zap wands, read scrolls and throw/quaff potions whenever you're comfortable.  I typically throw potions to find out what they are but I haven't won so I am not an authority.

Certain items can be identified by how many you find.

For example if you find 3 or more of the same scroll early in the game it is USUALLY (but not always!) a scroll of identity. I use those to identify the other scrolls. Similarly, if you find 3 or more of the same potion early in the game it is probably a health potion.

Bad scrolls (Scroll of Fire, Scroll of Destroy Armour, etc) can be dipped in fountains to create a blank scroll, which you can use to copy a good scroll by writing on it with a quill+potion of ink.

Your pet can identify cursed items, just give them the item through the chat menu (press 'p') and they will drop it a few seconds later if it's cursed. You can safely try out uncursed weapons and armor to see if they're good without wasting a scroll of identity!
