I will play Skyrim some more because I want to pretend it is game of thrones.  What are some good graphical/gameplay mods that you have used to enhance your experience?

What kind of game do you want?  There are so many mods depending on how you want to play.

1st priority is to make the game prettier.

I don't recommend any major gameplay changes if this is your first time.  You can also find a lot more quality mods at Skyrim GEMS.

After installing whichever you want, run LOOT and it will organize the load order to avoid any conflicts.  There are probably some mods I have personally used that I am forgetting.  You can ask me for my thoughts on certain mods because I have used a ton.  Good luck!

get that mod that makes weather actually matter, like you can freeze to death and poo poo, it's pretty hardcore

No, it's not bad. And it's not the case of CBBE anyway. It comes with more than one body style and even the thiccest one is still realistic. No bizarre giant boobs and poo poo, just good looking nudes.
